easy herb preserving?

if a salsa recipe calls for cilantro, oregano, cumin, and a cup of vinegar, and i end up with too many herbs too fast, could i just put the herbs in the vinegar and put it in the fridge till i need it?

you can do all kinds of things with the herbs I usually chop them up add a little oil and freeze them for salsas (I know you do not traditionally put oil in salsa but it freezes the herbs better if you do)
I think if you use vinegar it may overwhelm the fresh herbs

try some lime juice and same thing mince them up and freeze in lime juice

also I have used dried herbs in salsa with good success just use less

I love having "too many" herbs

I only use whole seeds when I can ..toast them a little in a fry pan then grind them in a cheapo coffee grinder when I am ready to use them

in salsa yes use it ground but the whole seeds are cheaper and much much better :)

mmmmmm slalsa season is almost upon us I am staring at one cluster of tomatoes with a slight blush

start with a recipe but really taste as you go ..you will know what you like ..salsa is one of those things you create!

I saw something once about mixing the herbs you need in with water, or lime juice and freeze them in ice cube trays so you can take out how much you need by the CUBE for recipes that call for that herb mix. Such as fresh salsa all summer long... or freezing say 'mint' in cubes for a fresh batch of lemonade.... or grated lemon rine in ice cubes for ice tea.... ect

I think that is an awesome idea!

that is exactly what I do then pop them out of the trays (thanks vfem I forgot the ice cube tray part :p )and into a zippy bag so you can grab what you need

honestly I like salsa better with lime juice than vinegar but that is just me :)
