Yummmm...that does look good! Yes, I'm half-tempted to buy some eggplants @ the Farmers Market this weekend as well!

My eggplants take forever, plus a few of them are dying (due to fungus) so I don't know if I'm waiting for eggplants that will never be :hu

Thank you Hatti! I had about 8 eggplants total... I ate most of them, gave away 2 and have one left for me! My plant is still producing and had several flowers all over it yet again... so I'm hoping for at least 5 or 6 more to use some of these recipes for.

Next year I will plant 3-4 plants rather then 1, I really enjoyed the eggplant. :)

I have four three inch eggplants :) not quite enough to make anything but I will try!!! thanks for the recipe how come I did not notice this before!

My eggplants seem to show signs of flowers now, hopefully i'll get a good crop as long as the weather stays warm its been pretty hot here the past couple days near 102 degrees, i'm crossing my fingers.

I skip the shrimp paste and soy sauce and just add a bit more fish sauce I love good fish sauce and this is by far the best fish sauce I have ever tasted it is called Phu Quoc and you can find it in Tacoma so come on down!!! lets go shopping!

I am growing lemon grass in a pot when you buy it in the store you just stick it in a glass of water and it roots then you plant it! voila always have fresh lemon grass on hand!

My favorite recipe for the long, skinny Asian eggplants:

Hot-and-Sour-Chinese-Eggplant

You can easily adapt the recipe to your liking. Use hot pepper to taste and whatever hot peppers I have on hand. Sometimes I use a combo of chili/sesame oil. It's easy to add other veggies and or a protein source if you like. I also double the sauce and serve it over rice noodles. Yum!
