I made a batch of English Toffee yesterday afternoon. This is my favorite Christmas treat! I plan to bring it along with Russian Teacakes to Christmas dinner with the family.

I am SO envious! Last night DD and I tried to make a very simple toffee recipe for a British Tea Basket gift we're making for someone. Simple ingredients - sugar, butter, salt. It didn't work! Separated totally, and the two of us hung our heads for the rest of the night feeeling defeated. We also tried to make British Golden Syrup and failed!

cracker crunch is by far the easiest version of something like toffee that we've done in many years.

I read about that separation problem with the toffee ingredients. Some folks say that if that happens, take the pot off the heat and whip it with a wire wisk until it combines again. Then put it back on the heat. Apparently, you can do this technique as needed until you reach the proper temperature.
