Freezing Eggs

The beaten frozen eggs are kind of lumpy when thawed and cooked. I have had luck using them in recipes, baked goods, etc. I think if you re-beat them before cooking, they will be ok. I do know not to freeze them in baggies. When I did that, the bags would get little abrasions on the corners while frozen, then leak as they thawed out.
So the extra large cube tray sounds good.
