freezing zucchini ?

Can I grate and freeze zucchini? My aunt gave me a BOX of zukes and I am afraid I won't be able to use them all before they go bad or we just plain get sick of eating them. I was wondering if I could freeze them or if the moisture content is too high, anyone tried it before or am I gonna be the guinea pig? :lol:

I just froze some yesterday. It and summer squash freeze pretty good and you don't have to blanch it or anything. Just get out as much air as you can. They're ok for sautes (kinda soft), but best for baking and casseroles.

That's what I wanted to know....I figured I would freeze them in 1 cup portions and use them in meatloaf, spaghetti sauce and baked goods.

Frozen grated zucchini works well for zucchini bread. The recipe I use calls for 3 cups of grated zucchini so I freeze 3 cups in a zip-loc type bag without blanching it, thaw it out, and use it all, including the liquid that comes out. Otherwise the zucchini bread is a bit dry.

I also slice it and blanch it before freezing to use as a vegetable. It does lose all consistency when you thaw and cook it but even with that it tastes pretty good in Janaury.

Add it into soups and stews. It helps with the flavor although otherwise you wouldn't know it's there.
