Depending on your area (rural, urban?).. you could get involved promoting community gardens or community ed classes on gardening topics.

Our school district has a community-ed program for kids and adults. I contacted the owners of a local nursery to hold some classes on composting, vegetable gardening, and container gardening. The classes filled up very quick.
