What about dry ice? :idunno They also make a cold pack for shipping, can't think of what it's called off the top of my head... I'm going to do a quick search... I have food shipped from the mid-west and it stays cold in shipping... I will find a solution!! I would love to try your cheese too!! :drool

I don't know if this is too cost prohibitive, but I know they work and they are reusable! I wouldn't mind paying a bit more for a quality product such as yours!

Well, then would be the biggest problem..The "powers that be" Here in AZ, you can't legally sell food not prepared in a commercial kitchen. And regulations on dairy products are even more strict. They are trying to make it illegal to even give away raw milk products!

If you can find a local goat farmer, or you can even use cow milk from the store. I have lately had to use about 1/2 and 1/2 cow and goat milk since the production is down now for the goats.

You will near the bottom of the instructions the "torte" recipe.

I use more vinegar, because it make more of the milk solids separate from the whey.

I use my vitamix to whip the drained cheese to a "cream cheese" consistancy. I need to put in extra cream to lighten up the cheese for it to easily spoon into the molds.

It is really pretty easy, just a bit time consuming.

Thanks for the link... I'll hang on to it for when I get my goats!! I'm hoping for Nubians for my birthday present in March!!!!
