Yeah, that looks like a good one Journey and I'm going to do it with the remainder of my jalapenos. I made pepper poppers the other night which were really good, but I don't like deep frying.
I love to stuff them with boudain, wrap with bacon and grill. Mmmmmm.........
I stuff with cream cheese, wrap with bacon and secure with a toothpick. Place on Bar-B-Que pit at one end with a good bed of coals smoking like a hay barn on fire on the other end. After they are good and smoked, scoot closer to the coals to crisp up the bacon. You don't have to use cream cheese, you can stuff the jalapenos with your favorite cheese or whatever your imagination desires.
