How many plants?

I may have asked this before, I'm not entirely sure. Anyways, last year, we canned up two 13g garbage bags full of sweet banana peppers. I have two dozen sweet banana pepper seedlings and I'm wondering how much this should produce. I'd really like to be able to produce the same amount as we canned last year, but I don't want to overtake the entire garden with just sweet peppers, as I have a LOT of other things that I've started and really want to grow out. Also, any hints on roma tomatoes and how many plants it would take to produce say 10 quarts of medium thickness sauce would be appreciated, even if it's a rough estimate. I just need some ideas on how many plants to have. If I have too many, that's fine, so long as I have enough room in the garden, if I don't have enough, it's not too big of a deal to buy stuff. I just want a rough idea.

Not quite yet. We still have I think two cases of peppers in the pantry. I think a case is a dozen, so, two dozen pints of peppers left. It should last us until we have our own harvest this year.

Entirely a geusstimate on the roma's, but I think between 1 and 2 quarts per plant. So much depends on how well they do in a particular year. :)

Thank you! That will give me an idea of what to plant. I can suppliment it if we don't have enough, or give away if we have too much, but I can use the estimate this year and then work on that for next year. :)

OK, I have a book that I use for garden amounts so I don't know if this will help. It recommends 5-6 pepper plants per person. It doesn't give quanitity for each plant only the # of plants. I hope this helps. How many people do you can for?

For tomatoes it recommends 2-5 plants per person which I think is pretty broad. If your planting for a family of 4 then you plant between 8 - 20 plants? I am not planting roma's this year for sauce though, I have had no luck with them the last two years. I am planting Super Italian, Amish Paste and Hungarian hearts to see if they produce better. Last year my Roma's were the size of golf balls and it just isn't worth the trouble.

I would really like to have your recipe for canning peppers. My husband likes them but I haven't gotten the recipe right for great peppers. They tend to be mushy. I would like to can sweet banana and hot hungarian peppers. I soak my cucumber is lime and have prefected a pretty good pickle but I need some help with peppers.
