Vinegar also kills vegetation so maybe it helps get rid of some of the roots but it is so diluted, so maybe not.

If you have a well used drain system, You can pour all the vinegar down the drain and the result will be that you poured vinegar down the drain. Even concentrated sulfuric acid will not clear some cloggs. What will work for a time is mechanical sliceing or dicing of the clog and / or roots.

If roots get into pipes leading to septic system, REPLACE THOSE PIPES NOW! Roots at the end of a septic field can be a good thing as they will utilize the water and nutrients.
