How & when to harvest horseradish?

We have been thinking about letting our Horseradish go without harvesting this year (horseradish from lesa also). I am tempted to pull some just to see how it is doing though.

At least dig up enough to have a taste. If you manage to kill your plants, just let me know- there is more where that came from!!
