I got a 1 gallon pickle crock yesterday. Now what?
Anyone ferment veggies? Lacto-fermentation is my new adventure. Any tips?

Go to the library and get either WILD FERMENTATION or NOURISHING TRADITIONS. You can also buy these books but they are a bit spendy.

These two books explain everything about fermenting. I ferment salsa, kraut, hot peppers, etc...

There is a whole fermenting thread over on sufficientself.com as well.

I've been experimenting with oriental methods lately with some great and some not so great results. My best so far is pickled red mustard.

On my way out to pick the garden to make some salsa. YUM!!!

I love the taste of fresh salsa way better than heat processed salsa.

Congrats on the crock!!! Go for the NT sauerkraut, it's amazing!!! Especially with Caraway seed.

I have a crock waiting for me at the Farmers Market. The man has made it custom for me. I wonder how it turned out??? I can't wait to see it.
