Change it how? I know people who can meat and then use it in stews and other dishes and it's great. I am not sure about putting the BBQ sauce on the meat and canning it because you have to process the meat for a long time at a very high temp and it might burn the sauce and this would taste really bad. I would can it into jars then add the sauce when you use it.

I made some plum jam last summer and it was fantastic. I'm sorry that I gave so much of it away as I am all out now :p . I am hoping to try some tomato sauce this year.

That is always a problem and next year people will be waiting for more jam. I'm getting hunger just thinking about it.

Yeah but my problem is that I give it to family who doesn't appreciate it so I don't know if they even eat it. I have given eggs before to family who end up giving them to someone else . Some of them are the kind of people who don't want to eat anything if it didn't come out of a box or grocery store bag. :rolleyes:

My sons girlfriend is like that, I babysit for her kids and if it isn't out of a can or package frozen they don't like it. I like to cook ... from scratch, it's cheaper and healthier and it kills me to be around them. I have no idea how these people will ever make it if the ecomony get really bad.

Yes, you MUST use a pressure canner for meats. It's a very serious process, with strict rules. Please get the Ball Blue Book, and follow it like Scripture.

As far as meat, I have noticed that BBQ pulled pork changes more in texture than it does in taste. But there is some change in taste, just not serious, in my experience.

I have canned a lot of cheap ground beef, crumbled and browned, drained and rinsed, canned in beef boullion, some seasoned, some not. The change in texture is pleasant to me. It is much more tender. I have stomach issues and need a VERY soft diet, so this works well.

By far and away, my favorite canned meat is smoked ham. I do not bake it first, as the sugars turn the canning liquid dark.
