Wholly thyme, clover, anything that is made to be stepped on....stuff people usually plant between pavers.

At groworganic.com they have an Omega 3 mix for chickens; clover, alfalfa, flax, and I can' remember the rest. It should take traffic, chickens, and minimal care. When you do mow it put it in the compost pile.
