Lunch with Korean Pancakes!

HiDelight posted a recipe for Korean Pancakes. I tried them the other night and they were pretty good! I loved the idea of being able to use so much garlic chive at once. http://www.theeasygarden.com/forum/viewtopic.php?id=26795

So today was left-over batter day, and just as HiD mentioned to me how the batter is more behaved the next day, I think the pancakes came out 10 x better! :drool

Everyone was missed at lunch; it was a mixture of Chinese Eggroll (my concoction), Korean Pancakes, and Miso soup. YUMMMM

this is one of my favorites and very nicely plated

good for you Ron! isnt it a wonderful dish ..try it with the really thin potato slices as well !


Korean food is the best food for gardeners it is such an art!!!

My eggroll:

I ground 1lb of ground beef or chuck. I drain well. Then I sautee green onions, carrot shreds, celery, hot peppers, and chopped fresh mushrooms.

When the veggies appear to soften a bit and the mushrooms begin to cook down I add 1 can of beansprouts ( I used canned because the fresh gets too fresh too fast ).

I buy various Sun-Bird brand oriental mixes. Sometimes I used the fried rice pack, sometimes I use the Beef and Broccoli pack (this one is juicy). This time I used the Chow Mein mix (also juicy).

I add the pack according to the package but slowly until my mixture is well coated but not over saturated (especially on the juicy mixes).

I pull off the stove and into a bowl to cool.

I then open the pack of Eggroll skins (you know I am not that adventurous to make my own) I add a bit of mixture and roll it up and seal with beaten egg.

Fry to your heart's desire. Normally my eggrolls are a bit lighter in color; but these were leftovers and so I reheated them for lunch.

This is one of those "make it up as you go along" type recipes. So no real recipe at all. Anything can be rolled up in Eggroll skin and fried! How about a Chili Relleno eggroll? :celebrate
