I have dried sliced potatoes to make a dish similar to this

http://peru-recipes.com/2008/02/carapulcra-de-cerdo-pork-carapulcra

they keep "forever" but are not flakes and would not even come out good as any type of mashing potato....you would have a sticky mess ..

but nothing other than soups or stews using these has turned out well

so good luck and post if you do it so we can know please

I just give sliced potatoes a good blanch then put them in the dehydrator until they are like rocks

I have to say these are great for camping when you do a dutch oven thing on the fire ..but not for backpacking because they use a lot of water and fuel to get to eating texture again

ps I did try homemade escalloped potatoes with home dried potatoes

not at all impressed with the texture at all

they are better simmered in a broth or stew but that is just me an my opinion and it could have been the recipe ..

however we were starved and most things taste good when you are that starved ..they were not good :p

I love that they have the sauce mixes and stuff on that one link
I think I may have to try this again when we camp this summer!

I am going to try the recipe I posted above for Carapulcra de cerdo it looks much better than any I have tried (I have made this dish maybe four times now I think eaten it a few more :) )

thanks for starting this thread you got me thinking about dried potatoes
