Making Cortido!

We made 2 gallons of organic Cortido this afternoon!! For anyone who is not familiar with Cortido it is a Latin American sauerkraut! Spicy! Yum!
We bottle it in special jars that let air escape but do not let any air inside.

So, for my cortido recipe I use cabbage, onions, carrots, garlic cloves, oregano, red pepper flakes, and sea salt. It is SO good! I will share my kim chi experience

I love homemade Kim Chi. I tried a recipe a couple of years ago, it was waaay too salty. I need the probiotics for my digestive system.
