My tomato sauce for canning recipe -

Fogl's Slow Simmered Tomato Sauce:

6 cups tomatoes peeled cored and chopped
1 Medium yellow onion chopped
1 tsp chopped fresh oregano
8 Leaves fresh chopped Basil
3 minced garlic cloves
1 4oz can tomato paste
2 tsp sugar
2 tbsp red balsamic vinegar
1-2 tsp kosher salt to taste
1 tsp cracked black pepper
(option pinch of red chili flakes)

Bring all ingredients in the pot to a boil and reduce to low. Put lid on the pot for 1 hour then stir and remove lid. Continue to simmer and stir regularly from 3-4 hours. Taste as you go, add more salt/pepper to taste.

Fill into sterilized pint jars within 1/2" of top. Add 1/4 tsp lemon juice on top of sauce if you are waterbath canning, and then WB for 30 minutes.

If you are pressure canning, 10 pounds pressure for 15 minutes.

Ohh that sounds like a great recipe, thanks!! I'm going to try it, that is, if i ever get time, and um, probably with farmers market tomatoes, since i dont think all those green ones i've got would taste very good ;)

It's ok... when I run out of the fresh tomatoes & my sauce is gone. Come winter, I'll buy canned tomatoes and just do that. 3 1lb cans work the same.

If you want a deeper flavor and you want to cook it longer.... leave the liquid in from the canned or the peeled tomatoes. The longer you cook and reduce it the more pronouced the flavors of the tomatoes & balsamic is. Very rich.

NwMtGardener all I have so far is GREEN tomatoes...this is the middle of August and my bi color cherries are just starting to turn color...everything else is still GREEN

Mmmmm Looks Yummy. :drool I may have enough tomaotes to give this a try :) Even after freezing fresh ones and making salsa. Good crop for a change. :thumbsup

I like a very robust duel purpose sauce and this does it for me. I use this on pasta and on pizza. It's also a good dipper sauce for cheese sticks and garlic bread because its so thick. I actually add a full tbsp of Sugar to mine now, as my daughter has FINALLY after YEARS of refusing tomato sauce, decided she likes mama's version enough to eat. She will still refuse store bought brands though. :/

The recipie I use is very similar except for the balsamic. I will have to add some in the next batch.
