The joys of being a chicken and duck mom. I started putting some bedding down for the ducks, no problem. I started putting bedding down for the chicks that will probably start laying soon and OMG, total chaos insured. My ducks all left the area and the chickens still haven't calmed down about the bedding. I finally got the female duck Aerial back in the area but those drakes are just being little stinkers. Much to my surprise though Whiner was outside and he didn't bother them at all. He's going to be a good dog. Thanks for listening to my rant.

The fawn runner hen has started laying eggs 😁. I absolutely love the fact that now I get to eat duck eggs. I'm hoping that the older pullets start laying soon. I will be getting 11 eggs daily. YEAH. It's awesome to know that I have them for baking and eating. I can use the eggs for my macaroni salad. I made egg salad sandwiches for dinner and OMG that was the BEST egg salad sandwich ever.

Aww fawn runner ducks are so cute. Ducks are great watch dogs tro. Duck eggs are a bit tough. I found just to mix a chicken egg and some cheese and onion with a tad bit of creame and walla. Of course Saul’s & pepper.
Also in my experience with duck eggs the make the best meringue on lemon meringue pies.
I had pekin and Rouen ducks for many years.

I'm going to start saving my duck eggs because I want to be able to make some more egg salad sandwiches. I can also make homemade egg noodles and my macaroni salad. I will try to get some for the meringue.
Do you ever use the duck eggs to make homemade mayo? I make homemade mayo all of the time with store bought organic eggs.

No I haven't but I am going to try it maybe my duck eggs will make me stop buying mayonnaise especially considering the only kind I buy is Best Foods/Hellmans. Forgot to add this is my first year with ducks

You will probably like homemade mayo way more than the store bought stuff as they use less good ingredients. I think homemade mayo is 100 times better!

This will not appeal to many but... I have been using Greek yogurt olive oil and acv vinegar in place of mayo . I find it delicious.
Also depending on what i am eating it with I add herbs or cayenne 🌶. Then mint if it's with say a curried meal

If I could get a Greek yogurt that wasn't sweet I would try this. I tried that oikos Greek yogurt and yuck the sweetness of it was yucky. I found a yogurt that I love but it's hard to find.

i'm surprised you can't find it at the grocery store. we get it by the quart containers.

we use a lot of whole milk plain yogurt. no sugar added other than what is naturally in the milk. the heavy greek style yogurt doesn't appeal to me at all and since i've been used to eating whole milk plain yogurt for so long i prefer it over using sour cream on top of potatoes or on the bean burritoes.
