my first broccoli with kale, swiss chard, and cabbage leaves. sauted with a little olive oil & some mushrooms thrown in. it was good. hubby of course wouldn't dream of touching it, so i'll have some more tomorrow.

Sounds good! Sometimes I just crave greens. Wish our DHs would trust us on this and make a little more effort to eat what's good for them. ;) I raise a jar of ACV and say here's to a long, happy life!

Hey!

I had our first chives with scrambled eggs and our first kale from the 2013 garden for lunch! I know, it sounds a little strange but . . . there was bacon in the kale :p!

This is the first time in many, many years for keeping kale going until spring. There are only 3 plants and they are here at home. New leaves have been growing a little!

Try the Cheesy Kale Chips. You would never imagine how this leafy green chips loaded with nutrients could be so addictive..

kale chips sound so good. it would be great to really munch down on something & not feel guilty about it

Well, they are good! And, it is surprising, Nelson.

However, they were a bit salty for me . . .

Maybe they just need to be processed a little differently to not be so salty.

We had greens with smoked sausage for dinner a couple of nights ago. This morning I had a microwave omelet from the leftovers - YUM-O!

Burt Wolf made a show about "how the Italians saved American Cooking." I loved that whole idea and imagine that it is just about 99% true. Northern Europeans had the idea that the "best food" was meat and bread. If you were dirt-poor, you ate vegetables, maybe even fresh ones. Good Heavens!

Well, we are still living with both those food legacies. If you actually experience the diets of many other people around the world, you learn that vegetables may be a part of every meal. Imagine eating greens for breakfast . . . many Americans cannot ;).

We seem to be "coming around" with the ingredients in an omelet. First of all, a tomato is not a vegetable - it is a fruit. We will allow it into the breakfast menu. That's good. However, our omelet fixin's have become more complex. That's great! Actually, an omelet is so "sophisticated" that we are accepting it into the menu of other meals.

About all I am going to admit in the way of veggies into the breakfast menu is something like a green onion. Unless I'm forced to . . . visitor in another home, I still can't quite "go" the other green veggies for breakfast. I do my very best to make up for that with my "3 servings of fruit" for breakfast. I think it goes a long way towards healthier if not quite a healthiest diet.

And, I gotta say that since stir-fries are such an important part of my diet -- I'm eating a bale of greens throughout the rest of my days :p.

those nice asparagus sprouts are good for breakfast omelets too. add in a chopped Serrano pepper & that's good stuff
