Not a Fan of Zucchini But ......

I never cared for zucchini, of course its one of the easiest vegetables to grow. Went to Italian restaurant this weekend. On the menu under appetizers was fried zucchini blossom stuffed with goat cheese. I like goat cheese so tried it. Breaded, stuffed and fried with a tomato dipping sauce out of this world !!! I really wanted to order a 2nd helping but refrained. If I cooked I would plant zucchini just for blossoms !!

I make an "apple" cobbler from zucchini that no one would ever guess it's not really apples. And I make lasagna with lengthwise strips of zucchini as noodles.

I have never really liked summer squash ... except in zucchini bread ... I will only eat it otherwise, to be polite and in an endless quest to learn to like it.

Here's something I like:

The growing tips, blossoms and all, of vining summer squash. They taste like winter squash :)!

I've gotten to where I really like zucchini these days, now that I've found several ways to cook it. I really like zucchini fries battered and covered in panko crumbs. I always have meant to try the blossoms, but never get to it. I think you can eat any squash or pumpkin blossom, can't you?

I use a veggetti to cut my zuchs into spaghetti "noodles". Since I can't eat real noodles and Gary likes the zuchinni noodles better then the gluten free spaghetti noodles.

I like to slice 'em, rub them with a bit of oil, sprinkle on a few spices, and put them on the bbq. Delish!

Fake apple pie with zucchini is good.

Always wanted to try blossoms. Hate to use that much oil. Can they be pan fried?

Zucchini relish is best relish ever. I can eat that straight out of jar.

always let a couple zucc's get large, scoop out the seeds and turn them into boats, stuff with a crab mix or bacon/potato/onion/3 cheese blend mix. those are our favorites, it's endless on what you can stuff them with......

Have y'all ever taken the really huge ones and played zucchini baseball? It's a blast. Haven't done that in years...... hope I get a over abundance this year.....
