I let it cook for about 2-3 hours on low then puree the fruit. At this point I add the spices and sugar. Then I leave the lid on for 2 more hours and then remove the lid and let it reduce and thicken. This can take 5-8 hours depending.
 
					
				 
 
		 
 
		 the peach butter sounds divine! We  had peaches here for .99cents a pound. They where awful. Grainy and flavorless.
