I have the recipe I use for pepperoncini and pepper rings posted on our website:
http://millriverfarm.com/recipe.cfm?id=408&catname=Canning, Freezing, Preserving - whole hot banana peppers work fine for a pepperoncini-like product

We like a mix of 1/2 hot banana pepper slices and 1/2 anaheim pepper slices for making pepper rings.

Pastrami - I have a no fail method for that. It's to die for! BIL found it on YouTube. I'll go find it and start a post. BBL

Edit: OK...pastrami post is here: http://www.theeasygarden.com/forum/viewtopic.php?pid=259364#p259364

I wonder how this would work with other peppers?

I had the problem of mushy peppers in the past, too. I googled and saved this thread where a person vacuum processed the peppers. There are more pickled pepper recipes from other people in this link also. Hope this helps. Click here.
