Spirea japonica "Shirobana" (also some other summer-blooming spireas, less noticeably) is a good shrub for color-changing flowers. They start fairly dark pinkish, then pale to white as they mature, so you have dark pink, light pink and white flowers all at the same time.

Also I have a little semi-hardy violet, forget the name, that starts out a medium purple-blue and pales to sort of lavender after a few days.

I know I play with my Hydrangeas and they go from pink to purple and some even go to blue. Always messing with acidity to change my moms. (Throw in some coffee grounds) it messes with her head! LOL

My honey suckle changes color... oddly it goes from a pink, to white to yellow on the same vine?! I don't know what kind of honey suckle it is? It has purple vines on it. It was sold to me as jasmine, which it obbiously was not.
