Recipe for buckwheat pancakes

Loved Aunt Jemima's buckwheat pancakes. Contacted them, no longer sell that mix. I've tried several different brands, none are close. Yes, even the organic brands weren't-see how desperate I've become? I want that nutty flavor. I even bought buckwheat flour at local organic place-no flavor. Have everyone went to the light colored flour?

So any solutions?

So what color is your flour? Stuff around here is a light tan. Aunt Jemima's were darker than the flour is now.

Its Bob's Red Mill organic whole grain Buckwheat Flour. Light tan.

Here is the recipe on the back:

1 Tbsp Active Dry Yeast
1/4 C warm water
1 C whole wheat pastry flour
1/2 C BW flour
3/4 tsp salt
1 C cold water

Dissolve yeast in warm water. Combine dry ingredient. Stir in yeast and cold water. Cover and refrig overnight or several hours. Then combine with:
1 Tbsp brown sugar
2 T margarine or butter
1/2 t of baking soda
1/4 C hot water

Let stand for 30 minutes and then bake on a lightly greased griddle.
