combine two of your favorite things, custard and pumkin along with suitable spices or none if you want to be a real purist about it, but most people add spices, cream, eggs, sugar and then put that in a pie crust and bake until done. we don't do pie crusts here much at all so we tend to eat our pumpkin without the other stuff. Mom is also a spice wimp so she's not much into pumpkin pie, but does eat it at times if someone else makes it or there's a storebought one...

me, i like pumpkin pies a lot. i've told this story a bunch of times, but as a 2yr old i learned how to climb up the cupboards so i could get at two pumpkin pies that were cooling on the countertop. i have no memory of it but i do understand my 2yr old self completely and agree with his adventuresome spirit and willingness to sacrifice his bottom for the goodness of the yumyums. and no, i don't know if i got spanked or yelled at or not. i'll have to ask Mom. :)

as for runny squash, yes, some have more liquid in them than others. cook them down or not whatever you prefer. we eat them and enjoy them all.
I just love spices but I would choose most certainly choose cinnamon with honey and maybe apple then put a crumble on the top :drool

That's done it, now i want to bake it and it's too late here, darn it

Sounds like our son. Made a stairway out of the drawers. Just about the same age too. He was after bananas though. 🤣

i would go for spotted ones with peanut butter. green ones, blech! noway. gotta have my sugar fix...

i hope your son has gone on to accomplish his goals? :) i'm sure he has with such a nutritious start!

I've always only like black coffee. I hate anchovies, and can't stand pumpkin spice. I must be weird.

i like anchovies in Worsechestershire Sauce and i can eat a few once in a while, but not too often. i don't go for pumpkin spiced drinks as to me i'd rather just have cider or coffee without too much kerfluffle. i do like some complicated cakes and pies (mincemeat is yum - without the spices it'd be something else). i don't do coffeehouse drinks often or even bar drinks either. some i like. most i wouldn't know what they were. a few have made me really sick. i don't drink much any more... pina colada appeals to me in the middle of the winter though... i never got sick of those or sick from them. i couldn't drink many. i'm still a lightweight. cheap date, expensive pet...

Pumpkin pie is nutritious too! If we have a crust, it is made from rolled oats with a bit of cinnamon and sunflower seeds. The custard is sweetened with maple syrup and molasses. That is what I had for breakfast today. 😁

But, yeah, he sure kept me on my toes. I loved the independence and inquisitiveness, but it was a challenge to keep ahead of him!

wow that sounds really good to me right now. i just had a few chocolate crackers and milk and wish i'd had pie instead. :)

You are in good company @Rhodie Ranch! Most people Hate anchovies and cannot stand it when somebody orders 1/2 sies with anchovies on a pizza bc the anchovy flavor permeates the whole thing.
These things are fads, pumpkin spiced _______, and that stupid new idea that all baked goods are made better with chocolate chips. I cannot pick out enough of the chips to eat them.
Blueberry muffins do not taste better with chocolate! It doesn't make a cinnamon bagel taste any better, either, IMHO.
I love a pumpkin pie made with canned pumpkin. I KNOW that everybody says cook down a pumpkin and it will make your pie taste Better, but I like it thick. Maybe I will figure out how to reduce the liquid and thicken it for my own tastes.
Freeze the pumpkin. It bursts the cells, thaw and drain in a colander. That will get rid of a lot of the water. Cook in a pot on the stove, stir to keep from sticking, until you get the thickness you want. If that doesn’t work, mix a little juice with cornstarch as a thickener.

How do you make your crust?
Oat Flake Piecrust [or Crumble Topping]
from Eunice Farmilant's, Natural Foods Sweet-Tooth Cookbook, p 101

1 1/2 cup oat flakes
3/4 cup brown rice flour [or any kind of flour]
1/2 teaspoon sea salt
1/3 cup cold oil
1 teaspoon cinnamon
2 Tablespoons crushed nuts or seeds

1 egg, optional
2 to 3 Tablespoons cold water or fruit juice

Mix together the first 6 ingredients. Dough should be very crumbly. Add egg and a small amount of water. As soon as dough begins to hold together stop adding water.

Dough will be very soft and doesn't need to be rolled out. For a bottom crust, simply press dough into a pie pan with your fingers [see TIP below]. For a top crust, crumble over pie filling.

Yield: 1 thick crust

Use leftover crust as a cookie dough by adding chopped nuts or fruit and bake at the same time as you make the pie.

TIP from a local pie shop owner: When patting dough into pie pan, start by forming the sides. This allows an even thickness and pretty edge to be achieved, then the remaining dough can be spread evenly across the bottom.

Thanks for the recipe! I make a simple oatmeal crumble with a stick of melted butter, cinnamon, brown sugar and enough oatmeal to make it crumbly. I use it instead of dough for fruit cobblers. It's real fast to throw together and can use on fresh, frozen or canned fruit. Put fruit in a pan or pyrex dish, spread crumble over the top and bake.

Now I have a recipe similar to that and I can use it for pie crust, brilliant!
