What will I do with it o_O?

The baked salmon already went in 4 omelets. I was heavy handed with it. Still have about half.

With leftover white fish, I would make chowder. It seems like I may have done that before with salmon :\. Or, it is that I so often cook extra tilapia, just so that we can have fish chowder ...

I'm almost tempted to make a quiche. Once again, I don't remember having done that. Maybe, it would be enuf different from an omelet.

Stir-fried rice, pasta salad? ... the lettuce plants in the greenhouse are tiny things! I knew the Asian greens would grow 2, 3 times as fast ...

If I put anything in the freezer, there is a danger it will be lost ... found 18 months later ... it's tossed. We aren't terrible about it but probably rate no higher than a C. I should have a running inventory of what is where :confused:!

Patties are good and we'd use the salmon quickly. It would also be good to leave the eggs out ... we had the omelets and French toast 3 out of the 5 days DS was here! Throw in all the eggs in 2 pumpkin pies and the lemon meringue ... Shoot!

I vote for anything salmon! A quality left over from my days in the PNW. Patties are always good -- smothered in peas and white gravy -- but salmon soup would be great on a blizzard-y day like today. M-m-m-m-m, salmon quiche makes my mouth water. Add some asparagus and I'd be in gastronomical heaven.

That must have been one big salmon to have provided all those leftovers.
I like salmon a lot and Kid#2 and I can do some damage to a couple of large fillets. Dh doesn't like fish, unless it's a stick, :rolleyes: so I don't make it as often as we'd like to eat it. Whatever you do with it I'm sure it will be delicious!

I vote for salmon patties too......but that's probably because most on my salmon comes out of a can and patties are the best way to make use of fish mush. The Louisiana influence is strong in my heritage so I would probably make gumbo.

Catfish is one of the best fish for the table at our house . The very best is Sturgeon when I catch one at above the legal size. :drool
