Short cut recipes for favorites

i love jalapeño poppers. Way too lazy to make them. So I take a pepper, cut top off, take out seeds/pith to desired heat. wrap it with enough bacon to surround it, bake or microwave till bacon done. Place desired amount of cream cheese inside. Quick and good. Some may argue, not a true popper. OK, you got me but it's good.

What short cuts do you do?

I made poppers once, the kind breaded with panko crumbs. Now that was a hassle. Better to just buy those in the freezer aisle. The bacon wrapped ones are a little easier to put together than those. But if I'm feeling really lazy, then I just make Jalapeno Popper Dip! :drool Dang it, now I'm craving some...won't get to the store until Wednesday though. Use canned diced jalapenos if you want to be a little lazier. :D

  • 6-8 slices of bacon, chopped and cooked crispy
  • 2 8-oz packages of cream cheese, softened
  • 1 cup of mayonnaise
  • 4-6 jalapeno's, chopped and deseeded.
  • 1 cup of cheddar cheese, shredded
  • 1/2 cup of mozzarella cheese, shredded
  • 1/4 cup diced green onion
Topping:
  • 1 cup of crushed crackers (I used Ritz; panko crumbs are good too)
  • 1/2 cup parmesan cheese
  • 1/2 stick of butter, melted

Preheat oven to 350.

Combine all of the ingredients into a medium bowl. Stir well.

Transfer to an oven proof dish. The size of the dish depends on how thick the dip is. The thicker the dip the longer it may need to warm up. I used this stoneware dish that is round and measures 12 inches across. My dip is usually about an inch thick.

Combine the topping ingredients and sprinkle all over the top of the dip.

Bake for 20-30 minutes or until bubbly.

How do you put in the cream cheese if the bacon surrounds the pepper? Seems to me you have no opening for the cream cheese.

I cut the cap (stem part) off. Opening waiting to be filled after it is nuked.

I make my poppers on the BBQ pit. Can't beat that smoky flavor. I make a LOT of them and we eat 'em ALL! No short cuts for poppers!

My cooking short cuts tend to be more like doing a lot of something or doing the prep work ahead of time, there is no substitute for real cooking.

Nope. This is Texas. If you want battered poppers :sick go to the fast food place and buy a cardboard tray of them with some dipping sauce. Real poppers are stuffed jalapenos wrapped in bacon, secured with a toothpick and smoked on the grill. I stuff them with cream cheese or boudain. Now I'm wanting some poppers :drool
