"Smoked" Veggies?

I just learned that a smoker can be used to make "sun-dried" tomatoes!

We know about peppers, right?

Anything else down this route . . ?

Softer vegetables do better in the smoker than say, carrots or potatoes. A smoker will dry tomatoes, but I wouldn't dare call them sun-dried. They will take on the flavor of the smoke. Squash is good in the smoker, as is asparagus. Obviously, most peppers are great in the smoker. The most common, of course, being the jalapeno. My personal favorite is the marconi pepper. It has a naturally smokey-sweet flavor to start with. Peaches and apples also do well in the smoker ;)

I'm hoping my MIL will let me borrow her smoker to do my paprika peppers this summer. :) I'll have to try the marconi and jalapeno peppers in there too.

I can imagine smoked peppers as an ingredient. Well, I guess I don't have to imagine . . .

The Coeur d'Alene casino chef who won the James Beard award, smoked the rhubarb in his bbq sauce . . ! I want to try a peach bbq sauce this year. Smoked? Apples?

I'm excited to learn that tomatoes can be smoked!

My buttercup squash pie, pumpkin bread, soup? smoked squash?

I'm sure most people know what smoked jalapenos are...chipotle. Steve, make sure you slice or cut the tomatoes up. The smoke will not penetrate the skin. Same goes for apples and peaches. Be warned though, it takes a long time to dry tomatoes in a smoker. Keep the heat down or they will burn. If you just want to add smoke flavor to them, it won't take long at all.
