Special recipes for heirlooms???

I was going through the Bakers Creek catalog and there are sooo many different varieties of so many veggies! Some of them I've never even heard of! Are there special ways of preparing these heirloom varieties or can I use them in any standard recipe for that vegetable type? I'd love to try some of them out, but don't know if I'd be able to use them in my favorite recipes.

I would just use them as you would use any tomato (just remember some are better for sauces then others, and some are better for slicing then others... and so on)

Of course, these heirlooms are really pretty and I would look for some special recipes to show them off to company and such.

Here, do a search here and you will find some good tomato recipes that you can do this with.
