tomatoes tomatoes tomatoes????

finally got tomatoes coming out of my ears Mostly cherry tomatoes...
my question is before you turn them into sauce can you roast them in the oven if so for how long I need to do something with these toms asap

My mom had given me a recipe for freezer tomato sauce and it called for roasting them first. I had never heard of doing that before, but I bet it would bring out a wonderful flavor. Also, you didn't have to peel them until after you were done roasting, which I thought was nice!

I'm not sure if roasting is acceptable for prepping them to can though......maybe someone else can comment on that.

We roast them before making them into tomato soup. Just be careful to use a disposable pan, if you use a good baking sheet it makes a mess thats VERY tough to clean up. We roasted them at 400 degrees for an hour or until the veggies are a little blackened. Gives it really good flavor. Hope this helps.
