I think I might be missing out by not growing Roma-type tomatoes.
I've never canned anything except a few jams but end up making & freezing a lot of pasta sauce at the end of the tomato season. I've grown "saladettes" and one year, failed to get my usual variety and decided I'd try Viva Italia. It was new and looked just about the same as the saladette that I'd intended to buy. No sweetness! I can't remember how the fruit performed in my usual boiling down & freezing for sauce . . .
About the only thing I've got going for my sauce is the number of varieties that go into it . . . the seedy & time-consuming stuff.
