I know you are supposed to trim in winter (I try in December), but are you supposed to do it again in the summer or just the one time?

Give them their real pruning in winter, I always got around to mine Feb/Marchish, when I was in Alpine, but I'm a procrastinator ;) .
Then whenever you dead head or cut for bouquets treat that as pruning also and cut to an outside live bud with 5 leaves.
(But you probably already knew that! )

I trim the flower just after the full bloom and give it to the chickens and sheep to enjoy. I love roses and they LOVE roses!!

Just keep deadheading, and cut just above a 5 leaf stem. The 5 leaf stem produce new growth better than the 3 leaf stems.

I trim mine in Jan/Feb, even when I lived in the Bay Area.
