my plan is to make vegetable soup with all the fresh vegetables i get from my garden and then can it . that way when its cold in winter , i can have fersh veggies from MY garden. we will see how it goes , but im definately going to try it.

have so many cucumbers so i decided i would try my luck at pickels this past weekend . 11 quarts , some dill and some bread and butter, every jar sealed ..WOW... i really thought it would be harder , but if you follow the directions it really isn't . i also picked 6 ears of corn from my garden this weekend. SOOOOOOOO much better that store bought. :drool:thumbsup

Hey! You can't do that!

Oh, I guess it is ME who can't . . . never canned, except jams. Pickles have turned out pretty bad. Can't harvest corn . . . heck, my corn plants have barely broken the soil surface, & only some of them!

Well, I can make soup! That is where I've developed some skill! Yep, I'm a good soup maker and I think your idea of using garden veggies for canned soup is first-rate, Digger'! I'd say a super idea . . .but then I'd have to ask for forgiveness :)! Anyway, that idea is a good one.

And, congratulations on your pickles and sweet corn!

I pick and eat-never pick extra until it's time to freeze some. With corn, start the water boiling then go out and pick it.

Nicely done, digger! I was surprised how easy pickles were too. Now, if I could just remember to eat them! Do you have a pressure canner, I think you would need that for veggie soup.

:welcome to TEG!! I pick what I can, put in gallon ziplock bag, and date them. That way they don't go too long before I know to use them.

yes i do have a pressure canner, a lady i work with used to have a huge garden and can all kinds of stuff when her husbond passed away it was too much for her to do on her own so she sold alot of her equipment. i picked up a pre4ssure canner (7 quart) has a new gage on it and shaker for $40.00. she said she gave ALOT more for it brand new. ( i have been cheating and picking her brain about all the spicifics and tricks you learn along the way).

I bet she appreciates you picking her brain. Even if the older gardeners/cooks can't do it anymore, they still like to talk about it and pass on their knowledge to someone willing to learn. You got yourself a deal in more ways than one, digger.
