And it was great on tost this morning. I was totaly suprised, made it just for a joke and it was great.

Wow. That's awesome. I always wondered if you could do something to preserve watermelons.

I'm curious about why they used sugar and no-sugar pectin, tho. Any idea?

If the rodents don't eat all of my watermelons this year, I will try to make some!

Most likely they added just enough sugar to get a good taste, but used the no-sugar-added pectin so they didn't have to add even MORE sugar just to get the thing to jell.

It sounds yummy and I think I may try it if I can find some of the appropriate pectin!

I made watermelon jelly last month and I thought it was great, its especially good over cream cheese on a bagel.
You can get the no sugar pectin from Walmart.
