What are you canning now?

TY. Could I just use an inversion blender instead? The flour mixture doesn’t get lumpy when it’s processed?
 
Canned 23 quarts of salsa over the past two days, with my mother's help. Still have two five gallon buckets of gifted tomatoes to work up, and probably another two more from my own garden. Planning on doing one more batch of salsa, then working up the rest as plain pureed tomatoes. I will turn them into soup or sauce when I use them.

Why does everything have to ripen on the busiest work days? :bow
