Ha! Marie, there's nothing to it.

Krusteaz Pancake mix out of the box. Heaping cup of the mix and the equivalent of 1 (very ripe) banana of cooked sweet potato. It can be cooked in a microwave oven .

Mash with a heavy fork or use a blender and beat it lightly into the flour with water. We have a special, dollar pancake griddle these days and that's the dough on it .

Funnily enough, I just found a similar recipe clip on youtube. Only with dates as a the base

I like the thought of this combination a lot.
This reminds me of the picnic bars that was sold here. All it's missing is the toffee
