Commercial Duck should not be greasy. Although much more than chicken or turkey.

Prick the skin of the duck so the fat can escape as it cooks. Duck fat is so good to cook with! I used it in stir fry and rolled sweet potato fries in it, then baked them. And the duck skin, crispy, is worth fighting over! :drool
