Wild Edible Weeds ... ???

I think that if you could say that something tastes like spinach - that isn't related to spinach - it would be nettles.

By the way -- Lambs Quarters and Orache are related to spinach.

American Indians also harvested the seed heads on lambs quarter. They pounded them up into a kind of paste formed them into patties and toasted them on a hot rock in the fire.

Wild anise is another to watch for. The young fronds give salad a nice fresh licorice flavor. After it deveops a stalk it becomes too fibrous to eat but if you wait till it ripens the anise seeds are very useful as spice. It is related to dill and looks a lot like it. It even hosts the same butterflies, notably the yellow and black swallowtails.

The range of wild anise keeps spreading. By now it can be found almost anywhere. It's recently been creeping down the Baja peninsula.
