I really don't know exactly to be honest. I can venture a guess based on a heaping meat tub of tomatoes weighting ~80 pounds. One tub = 7 roasting pans... so that is ~11 to 11.5 pounds per roasting pan.
So for a single batch of this recipe, I'm going to guess about 23 pounds of tomatoes.
