My late aunt has a self-published cookbook with about 7 or 8 recipes in it. I've only tried one of them, and that one doesn't have exact measurements, unfortunately, but is easy enough to wing it.
Summer Squash Casserole
Simmer sliced summer squash with onion in a little water. Drain and mash. Add 1 cup grated cheese, 1 beaten egg, 1 cup bread crumbs, 2 tbsp milk, salt/pepper to taste, and a lump of butter. Put in a buttered casserole and bake at 350* until bubbly and browned a little on the top.
There are also recipes for Summer Squash with bacon and onion, Chili and Squash Casserole (no measurements - uses chili, corn bread dressing, mush soup, cheese), Summer Squash Casserole (with canned soup, sour cream, carrots and stuffing mix), Rice and Squash Casserole (rice, green chilis, cheese, etc), Summer Vegetables (tomatoes, zukes, yellow squash, and herbs), Vegetable Saute (with onion, chili, corn, stewed tomatoes) and Fried Zucchini.
