Thinning beets yields a vegetable right at the top of my favorites. You might want to try starting beets in potting soil and transplanting.

if it's beet roots you especially enjoy, chard would be a miss. If you do not like the heavy stems of chard, i can well understand that, @Rillowen . I like Verde De Taglio chard. It has thin stems and tasty leaves.
I dont mind the stems as much honestly, but salad type leaves I have an abundance of. My favorite being mustard greens. 😁 I have purple lettuce, turnip greens, endive, horseradish greens, sweet potato leaves ect. I had purple kale but I didn't like the taste. For some reason I can't seem to get cabbage to grow, maybe I'm mistaking the sprouts for weeds. That's part of why I love my purple lettuce, its unmistakable!
It is indeed the beet root I am wanting. I even splurged and spent 5$ on 10 giant mangonel beet seeds this year, planted then 4 different ways at 3 different times... not a one. I only had 2 i even found a sprout! I think maybe the voles just eat the sprouts as soon as they show. The 1 that made it a while i put under a bottle, but the other 5 I did that with never showed. 😢 I grew some last year in the front garden bed, but even there only 1/5 of my seeds produced crop, but i found out near the end they dint like mustard, so i remived the mustard and the ones that were left took off. This year I thought i would be better because i was conscientious of what to plant it with, not a one. All my seeds are gone. 😭

I thought beets hated transplant, which is why I didn't try pots. At this point if I manage to get more seeds I'll definitely try in some larger pots, and maybe just let them stay there!
