@baymule - Can't wait to try this recipe as we have a good amount of zucchini right now. Also have TONS of cucumbers- do you have any yummy recipes or suggestions for them? Thanks for posting this!

Squash lasagna. I want to try dehydrating the squash, as it gets kinda juicy in the lasagna, plus it would store well for winter.

This is the best sweet pickle recipe there is. :drool I have made them since high school, it is my Great Grandmother's recipe and I got it from my Grandmother. I am out of them and my cucumbers failed. :hit I finally picked ONE cucumber today. I wish I had tons of cucumbers! I am going to replant, maybe I can get a crop, if the scalding heat will let the vines survive. Make these pickles, they are fantastic!

So, I'm not the best at cooking but I improvised with the two recipes listed and fixed some fritters this afternoon. I was worried about how they would turn out, but they were YUMMY. Half of them were gone in this house before they even cooled. Thanks for sharing the recipes everyone!
