Vegan gone wrong

Vegans have to pay attention to everything in their diet if they want to stay healthy. Omnivores just eat what's set in front of us and usually do OK.
 
You see, it's the cow eating the kale - then you are eating the cow.

My suspicion is, that you'd better hope that the cow has a good diet.

If you want tender kale, allow it a month of freezing temperatures. It's almost too tender after that.

Have we considered the healthy exercise of chewing?

Most kales and cabbage are the same species. Cabbage has the large leaves but short stems; so the leaves curl and blanch. A little selective breading could probably turn Scotch kale into a Savoy cabbage. However, that blanching indicates a loss in nutrients. It's one reason broccoli has so much food value and cauliflower, so little.

I say, ambush it, wrestle that kale to the ground, take it home and eat it! You are only likely to sustain some sore muscles and bruises and shouldn't require any special emergency care.
