Just eat stuffed green peppers that were frozen from.last years garden. Also pumpkin cream cheese muffins.

Pumpkin was last year's frozen pumpkin puree. The muffins are sugar free, with monks fruit sweetener instead of sugar. My wife said the recipe called for 1 cup of sugar but she used 1/2 cup of monks fruit instead.

I didn't get a picture of the stuffed green peppers but here's a picture of the muffins. Yes I eat two 😋

How do you like the monks fruit as a sweetener? I've always been curious to try it.

I like it very much, it's allowed me to be able to eat desserts again. But I found 1/1 is too sweet. So I do 1/2 to 1 and it's just about right. For example... I used to put 2 teaspoons of white table sugar in my coffee, now I put 1 tablespoon of monks fruit and it's plenty sweet enough for me. Your mileage may vary though 😁

I always forgot that I have a LOT of rhubarb growing. I snapped off 2 seed heads last week.

ours have been barely growing so far this season. just a few inches tall. i expect with some warmer temperatures and more sunlight later this week to give them a boost.

we've been using up some of our canned tomatoes and frozen squash.

Isn't that something!? There are 2 more in the basement, all 3 are Winter Sweet (also known as Oregon Heritage). The Buttercup and Cha Cha were finished a few weeks ago. Only a few were tossed this Winter/Spring.

Who was it @Cosmo spring garden ? Was she the one with Winter squash really lasting well into '22? Curing before going into storage, that is all I'm doing. It is also likely that our long, hot and dry growing seasons that last few years has something to do with keeping quality.

dry with high sugar content, yes, those are both preservative factors. :) yummy squish...

We had FIVE rhubarb plants and dug up 3 to give away this Spring. The TWO that remain should provide plenty for fresh use and even some for the freezer.

Two pies just went in the oven, gotta check that timer and turn down the heat in a bit.

Rain last night and a little more this AM so a perfect morning to have 3 windows open a little and the oven baking some pies! It's 52°f (11°C) outdoors and might stay close to that through the day.

The pies will be out in time for my 2nd breakfast but, I'm going to refrain from having a slice since they will be boiling hot and I'll wait for lunch ;).

I did mention that I had winter squash last until July 2022 which was harvested in november 2021! I actually just planted seeds I had saved from that squash :)
