I picked a gallon ziplock full of salal berries and I plan to make salal mead! Ive made blackberry mead before but never salal mead. Here are a couple of pics of the prep work --

How appropriate is this!? Today is National Mead Day.. I buy mine from Silver Hand Meadery in Virginia. There was a local place here in Vermont that used to market their mead, but they're no longer in business.

I've never had salal berries. What do they taste like?

If you eat them off the bush they taste like a combo between a blueberry and applesauce. If you cook them into jam and add some sugar, it tastes just like blackberry jam without the seeds.
