I made sweet potatoes souffle two days ago. I used just dug 'small' potatoes. It baked up beautifully, but in a few hours I had sweet potato soup. Did the extra moisture come from the potatoes being fresh? I would have left them to grow more, but we had super cold temps. Thanks.
