I use the low sugar and do 1/2 and 1/2 with splenda and sugar and it stores and works just fine. I also put zucchini in my jam for a more healthy jam.
I haven't used olny splenda YET...but I will be....
The only problem with that many carrots, is once cleaned cut ect they only produces 6 quarts of canned carrots.... plus what the kids ate before I canned them I thought I would have more to can lol.

Someone forgot to tell me and my carrots that they were hard to grow, lol. I didn't get much else to grow right this year with all the rain and such but my carrots turned out awesome. :tools :watering

Well first it was so wet it flooded out a big portion of my garden. All I was getting was lettuce, so I replanted finally and now have onions but no lettuce.

I have an old large pecan tree in my front yard and would like to start harvesting the pecans (instead of hubby mowing them) . So my ? is how do you crack them and store them? I know I may have to invest in a pecan crusher thing, but how do you do it?
