1st try at dehydrated tomatoes

Our freezer is getting too full and there are still many tomatoes on the vines. So I decided to try dehydrating some. I filled all 9 trays with 1/2 inch thick slices. It took almost 24 hours to dry enough! Then placed them in jars and sealed with the vacuum jar sealer I bought to go with our food saver. That thing is cool. I got three quart jars, but could have put them in snugger and only had 2 jars.

Carol, couldn't you have put them in ziplock bags? They would take up less storage space.

Yes they would but I wanted to be sure to get all air out. It is humid here and if there are not 110% dry they will mold quickly. (Still might in the jars if I did not get them dry enough.) :(
