I NEVER add water. It takes too long to cook off. Just start with a medium heat and increase when juices appear.

Peal and quarter apples. Put em in a pan. Cook tilll ya can mash em. Add a little sugar or cinnamon if you like.

Once you have applesauce you can make apple butter!

Just cook slowly all day with cinnamon and nutmeg. OR put it in a crock pot and cook till its a brown goo.

We make applesauce every year and when it's fresh it's wonderful. BUT when we can it it always gets kind of mushy. In January/February/March when I want some good homebrew applesauce I'm usually disappointed. I always like my applesauce a little grainy and slightly lumpy, not like tomato paste. Is there a method some tip for canning applesauce that will not make it mushy?

Smiles I wouldn't cook it down as long before canning it. Leave it chunkier since you still have to can it and that will help cook it down some more. Give that a try and see how you do.
